Doubtful supply of nutrients we need to live. Why?

Lack in abundance

In unserer westlichen Welt, gibt es fast nichts, was wir nicht kaufen können. Und obwohl das Angebot an Nahrungsmittel im Supermarkt endlos erscheint, haben immer mehr Menschen chronische Krankheiten aufgrund der Unterversorgung mit Nährstoffen(1). Die Gründe sind natürlich vielfältig, aber eine oftmals einseitige, schnelle Ernährung in der Hektik unseres Alltages ist eine Ursache, warum unser Körper aus dem Gleichgewicht gerät. Das ernährungstechnische Yin und Yang ist nicht in Balance. Der Körper gibt Warnsignale auf die wir meißtens erst hören, wenn es richtig weh tut.

Gründe für eine Nährstoff-Unterversorgung können sein:

Nutrient-poor soils

Monokultur, Kunstdünger und Pestizide entziehen dem Boden Nährstoffe. Letztere bekämpfen zwar Schädlinge, aber sie bekämpfen gleichzeitig die nützlichen Organismen im Boden.

Long storage times

Weeks in cold storage, then in the supermarket, then in our home for a while... and the tomatoes, cucumbers, zucchini, etc. still look great. Genetic changes/crosses change the nutrient profile.

The beloved microwave

Super practical, but not recommended from a nutritional perspective. A large group of important plant substances (flavonoids), which act as antioxidants, are reduced. Among other things, they can protect against cardiovascular diseases.

Harvested unripe + long transport routes

Es ist kein Geheimnis, dass Bananen & Co unreif geerntet werden, um dann auf dem Seeweg (2 – 4 Wochen) zu reifen – abgeschnitten und ohne Sonne. Dadurch können sie nicht den natürlichen Nährwert bilden.

Strong food processing

Durability processes kill harmful microorganisms, but at the same time there is a loss of nutrients (e.g. vitamins, enzymes). Additives such as sugar, industrial salt, fat and preservatives put a strain on the organism's vital substances.

Climate change

Extreme Wetterereignisse, Dürren, Überschwemmungen, Hitzewellen stressen Pflanzen, so sind sie oft nährstoffärmer. Je mehr CO2 in der Atmosphäre ist, desto schneller wachsen Pflanzen. Sie bilden dadurch weniger Nährstoffe.

- Zinc deficiency: Weakening of the immune system, delayed wound healing, hair loss and taste disorders may occur.
- Iron deficiency: Can lead to anemia, which manifests itself as tiredness, weakness and pale skin. In the long term, organs can also be damaged.
- Vitamin D deficiency: Weakening of the bones (osteoporosis, ⚠️K2 plays a major role), increased susceptibility to infections, muscle weakness and depression can be the result .
– Vitamin B12 deficiency: Damage to the nervous system, anemia and cognitive disorders are possible consequences.
– Folic acid deficiency: Increases the risk of certain types of cancer, Birth defects in pregnant women and cardiovascular disease.
- Iodine deficiency: Impaired thyroid function, which can lead to fatigue, weight gain and sensitivity to cold.
- Omega-3 fatty acids Deficiency:Increases the risk of cardiovascular diseases, inflammatory diseases, depression and cognitive disorders, memory disorders (DHA deficiency). ⚠️ Be careful with the unfortunately very often dirty business with Omega3 oils. Good, honest quality is much rarer than the Omega3 industry suggests to us.
